Smoky capsicum strips

Red capsicums are one of those vegetables that are as good as they are fresh and crispy, as smoky and chargrilled and smooth as you can get.

Start in a hot hot oven….

Roast until the capsicums (whole capsicums) are charred or blistering on all sides. The top rack in the oven is best!


When they’re ready take them out and put them straight into a plastic bag and tie it shut. This process helps the skins release and once cooled they’ll be easier to peel.

Once skins are peeled, deseed the caps, then start tearing the strips…. this is rustic, the perfection is in the imperfection!

Mix your strips in a bowl with salt, olive oil and dried oregano…. 


Adding Vitamin C to your diet will help with iron absorption which is a common problem when you are coeliac. πŸ˜‰
