Red capsicums are one of those vegetables that are as good as they are fresh and crispy, as smoky and chargrilled and smooth as you can get.
Start in a hot hot oven….
Roast until the capsicums (whole capsicums) are charred or blistering on all sides. The top rack in the oven is best!
Once skins are peeled, deseed the caps, then start tearing the strips…. this is rustic, the perfection is in the imperfection!
Mix your strips in a bowl with salt, olive oil and dried oregano….
