What a mouthful!

Here we have a chickpea, peanut butter, choc chip, gluten free cookie…Yes I know it’s a mouthful…. but trust me it’s worth it.

Made from a recipe passed onto me, so sorry I’m not sure where this recipe originated from but I’m sure glad the handwritten recipe landed in my lap!

It might look like a crunchy little critter from the photo, but it’s not. It’s actually a soft, not too sweet cookie and given the ingredients I don’t feel too guilty indulging either. 🙂

RECIPE:

GLUTEN FREE CHICKPEA & CHOC CHIP COOKIES

Ingredients

400g Can drained chickpeas

2 Tspns vanilla extract

1/2 Cup + 2 Tblspns (165g) Peanut Butter

80g Honey

1 Tblspn baking powder

Pinch salt

1/2 cup (90g) choc chips

 

Method

  1. Combine all ingredients (except choc chips) in food processor until very smooth
  2. Add choc chips
  3. With wet hands form balls approx 1 1/2 inches
  4. Place on baking paper and flatten slightly with back of a spoon
  5. Bake for approx. 10-15mins at 180 degrees celsius
  6. Makes about 15
